Health Benefits: Cooking with Coconut Oil

Are you cooking for a healthier life? This recipe is not only absolutely delicious but it contains many ingredients that have a positive impact on your health and is good for your waistline. That’s a win-win-win situation. For instance, the spice turmeric is known as the spice that ignites your Immune System, is an incredible antioxidant, anti-inflammatory and improves memory. We all know how great garlic is but ginger also contains a powerhouse of benefits. CURRY WITH COCONUT OIL

1 Tbsp of Coconut Oil (I prefer Gold Label Tropical Traditions from bestcoconut)

½ lb grass-fed beef

1 medium onion chopped

2 cloves garlic minced

1 tsp ginger minced

1 16oz can of tomatoes, petite cut ( or use fresh) -*if you want it smoother puree the tomatoes before adding

Frozen or fresh peas

Shans Curry Mix (Ingredients: Coriander, Turmeric, Cumin, Mustard, Fenugreek, Black Pepper, Garlic, Fennel, Poppy Seeds, Chili, And Dried Curry Leaves)

8 oz of Coconut Milk

Simmer your meat in a bit of coconut oil until just cooked. Set aside including any juices. Simmer onion, garlic and ginger in Coconut Oil for about 3 minutes and then stir in about 1 ½ Tbs of the curry mix (adjust for how hot you like your food). Continue to fry for a couple minutes. Add the tomatoes and let it simmer for about 10 minutes. Then add back in your meat with juices. Add the peas and the coconut milk. Simmer for another 5 minutes. Dinner is served! It is super simple and you can add anything at all to this curry. It is good over Basmati rice. My girls love it served over a steamed Spaghetti Squash that then has the consistency of real spaghetti but the nutrition of a squash. If you’d like it to be vegetarian replace the meat with cooked red lentils.
